A simple and delicious recipe, once you try this Spanish dinner staple, I bet it'll regularly feature in your dinner plans! It is one of our favourites and served with a fresh green salad makes the perfect meal!
500g potatoes, peeled
150ml extra virgin olive oil
salt and pepper
Cut the potatoes into thin slices. Slice the onion thinly.
Heat the oil in a large, oven-safe frying pan over a low heat. Add the potatoes and onion, and fry gently for around 30 minutes, stirring occasionally until the potatoes are cooked.
Remove the frying pan from the heat. Sieve the potatoes and onions out of the frying pan and set aside.
Whisk the eggs in a large bowl. Season well with plenty of salt and pepper.
Add the potatoes and onion to the egg mix.
Turn on the oven to 200ºC (395ºF) on the grill setting.
Return the frying pan to the stove over medium heat. Pour the egg/potato/onion mixture into the frying pan and cook until you see the edges of the tortilla are set.
Now place the frying pan in the over just underneath the grill. Cook for another 5 - 10 minutes until the omelette is nicely set. The frying pan will be very hot, so get an adult to help you remove it from the oven.
The Tortilla Espanola is delicious served warm or room temperature.
