The avocado dip from Mexico that we just can’t get enough of! So easy to make - and SO delicious!! (Probably best to double this kid-friendly recipe!)
Prep time 10 minutes, serves 4
1/4 red onion
1 lemon, juiced
Prepare the ingredients by chopping the onion finely, de-seed and dice the tomato, and roughly chop the coriander.
Cut the avocados in half and remove the seed and skin.
Chop the avocado roughly and then smash with a fork.
Add the other ingredients and stir until well combined.
Taste and then season with salt and pepper.
Serve with corn chips or freshly cut vegetables.
TOP TIP! If you don’t like the taste of raw onion, marinate the finely chopped onion in the lemon juice for 30 minutes before starting the rest of the recipe.
