Italy: Caprese Salad Recipe
This salad is our absolute favourite! We'll use any excuse to put these three ingredients together - and gobble them all up!!
Caprese Salad (or insalata caprese in Italian) is named after the Italian island of Capri. The colours of the salad represent the three colours of the Italian flag (il Tricolore). The Italian flag design was inspired by the French flag, though France's blue was replaced by the green, representing Milan's Civic Guard. The three colours are said to symbolise the following:
green for hope
white for faith
and red for charity

ingredients
4 large tomatoes
250g fresh mozzarella
extra virgin olive oil
coarse sea salt
black pepper
6 fresh basil leaves
balsamic vinegar
method
Roughly cut the tomatoes and put in a large bowl.
Tear the mozzarella and add to the bowl.
Tear the basil leaves and add.
Season well and add a splash of extra virgin olive oil and balsamic vinegar. Toss to combine.
Serve with fresh ciabatta!
TIP: some Italians stack the tomato slices, mozzarella slices and basil leaves in alternating layers, which looks super pretty and is a great way to put the salad together too.
