Denmark: Vaniljekranse (Danish Butter Cookies)
I don't know about you, but one of the things I clearly remember from my childhood is the tins of Danish butter cookies that would go on sale at Christmas time! So Yummy! And now, with this simple recipe for Vaniljekranse - you can make Danish Butter Cookies whenever you feel like it!

ingredients
1 vanilla bean
175g caster sugar
200g soft butter
1 egg
250g flour
75g ground almonds
method
Preheat your oven to 200ºC (395ºF).
Slice the vanilla bean in half lengthwise. Scrape out the seeds with the back of a butter knife.
Mix the sugar, butter, flour, and ground almonds together in a bowl.
Add the egg and vanilla, and mix it all together into a soft wet dough.
Spoon the dough into a piping bag fitted with a star nozzle.
Pipe small circles (wreaths) of dough around 4cm in diameter onto a lined baking tray. Space the cookies around 4cm apart.
Bake the cookies for around 6 minutes, or until golden in colour.
Cool the cookies on a cooling tray.
makes 18 cookies, prep time 15 minutes, cook time 6 minutes
